- 1 c. gluten-free oat bran
- 1 c. powdered non-fat milk
- 1 t baking powder
- 1 t baking soda
- 1 t cinnamon
- 2 T artificial sweetener brown sugar blend
- 3 large eggs, beaten (alternative: egg whites or egg substitute)
- 1/2 c. applesauce, no sugar added
- 1 c. grated carrots (about 2 large or 3 small)
- 1/4 c. raisins

Brussels Sprouts with Mushroom Sauce

Brussels Sprouts with Mushroom Sauce Ingredients
- 1 lb. Brussels sprouts or broccoli, cabbage, kale, collards or turnips
- 1 c. chicken broth, low sodium
- 2 t lemon juice
- 2 t spicy brown mustard
- 1 t dried thyme
- 1 c. sliced mushrooms
Directions
Trim the sprouts and cut in half. Steam until tender, about 6 to 10 minutes. Or microwave on high for 3 to 4 minutes
