Caribbean Red Snapper/Pargo rojo caribeño

This Caribbean red snapper dish can be served on top of vegetables along with whole-grain rice and garnished with parsley. Salmon or chicken breast can be used in place of red snapper.

  • 2 T olive oil
  • 1 medium onion, chopped
  • 1/2 c. red pepper, chopped
  • 1/2 c. carrots, cut into strips
  • 1 clove garlic, minced
  • 1/2 c. dry white wine
  • 3/4 pound red snapper fillet
  • 1 large tomato, chopped
  • 2 T pitted ripe olives, chopped
  • 2 T crumbled low-fat feta or low-fat ricotta cheese

Vegetable Dip Mix

These ingredients are in the right proportions for one batch of dip mix. For a gift jar, keep adding a round of all five dried ingredients, in these amounts, until you have enough to fill the jar.

Vegetable Dip Mix Ingredients

  • 1 T dried parsley
  • 1 T dried onion flakes
  • 1 T dried green onions
  • 1/4 t red pepper flakes
  • 1 T sun-dried tomato bits
  • 16 oz. fat-free sour cream

Directions

Combine all ingredients together in a small jar or container. Blend 4 T dip mix with 16 oz fat-free sour cream. Serve with cut vegetables.
